Do you like to eat but have little time to plan or cook, well I know this is why fast foods consume most of us and make for unhealthy choices when we eat.

Easy Chicken salad is one of my favorite quick and satisfying foods:

Drain a can of white Chicken dump it in a bowl

add one stalk of finely chopped celery

add a dash or two of Old bay seafood seasoning

blend with 3 or 4 tablespoons of Mayo

Now I like to top mine with sliced sweet pickles but that is up to you. You can eat it with or with out bread and its so so good for you too.



Diabetic Friendly Monkey Ball cake

4 cans of refrigerator biscuts cut into 4s

toss these in a plastic bag with cinnamon and splenda

drop them into a bunt pan one layer at a time add thinly sliced apples to each layer and raisins if you like

Bake in 300 degree oven till done... so very good with nice hot coffee for Breakfast or desert.

Here is 3 very fast recipes that are quite tasty I have improvised from lack of food in my cabinet in the past and have kept by demand of the family.

Box of New Orleans Style Spanish Rice
Can of Diced Tomatoes (As directed from Rice directions)
Can of cooked chicken or turkey (yes, in the US you can even buy chicken in a can heh)

Follow the directions on the box of rice.
After the rice has boiled and before you stick the lid on to let it simmer just add the chicken or turkey.

And there you go, a side dish becomes the main course. And a quite tasty one I night add.

This recipe takes a close watch since I've never paid close attention to how long it takes to cook.

Chicken Breast
Can of "seasoned" diced tomatoes (I prefer the herb and garlic ones)

Spray the pan with cooking spray and set on medium heat. Add the chicken breast once the pan is heated and cover with the tomatoes (juice in the can as well). Put a lid on it and leave for about 15 min. Remove lid and turn chicken over. Let the chicken continue to cook with the lid off. Depending on how much water was in the chicken you may need to add some water. Do not let the water completely evaporate from the pan. About 15 to 20 min later slice into a piece. If its still pink let it keep cooking. Chicken is done when its all white throughout.

Easy Lemon Pepper Chicken

Chicken Breast
A Lemon or Orange (I've also used a tangerine with success)
Bottle of Lemon Pepper Marinade
Paprika (spice)

Use a casserole dish just big enough to fit the chicken breast into in a single layer.

Pour a 4th of the bottle of Marinade into the bottom of the casserole dish. Lay in the Chicken breast and cover with the rest of the marinade. Let sit for the recommended time on the bottle. Slice the lemon and lay it on the Chicken breast, then sprinkle the Paprika on top. Cover with foil and put in oven at about 400 degrees. Bake for about 15 to 20 min. and remove foil. Let continue baking until chicken is done.

While these recipes are not really that quick to make they take hardly any prep time which is great when your dealing with a bunch of wild children. ;)

There is also a quick cookie that I make sometimes. You simply buy the pre-rolled sheets of pie dough that you normally lay into a pie dish. Lay it on a cookie sheet instead and sprinkle it with cinnamon and sugar. Cut into squares using a butter knife and place into oven at around 300 - 350 degrees until it browns. Its a huge hit with my kids.
