The Little Drummer Boy - Harry Simeone Chorale (note: I did this link from work where I can't actually verify it so I'm just assuming I've chosen a good link).

There may actually be other Christmas songs I like better, but for me that particular version of that song has always stood the test of time. When I hear it, I really feel like it's Christmas time.

But I have plenty that I like. I just did a 5 and a half hour set of Christmas songs. And that's a cut down of an older list that was about 12 hours.

Me, I'm partial to Santa Baby, but there are so many renditions of it, it's hard to choose.
